Black Beans
Superfood
Health benefits and recipe
Beans are a superfood and a great, easy addition to your diet.
Black beans are rich in minerals and folate (B6). They’re high in fiber and protein. They help lower cholesterol and triglyceride levels.
Use black beans in soups and salads. Puree them for a dip or sandwich filling. Make them into veggie burgers. The possibilities are limitless.
This video gives a quick recipe for black bean salsa and here is a link to my own black bean soup.
Using canned beans makes for quick meals. However, I don’t like the possibility of BPA in canned foods and I don’t like the texture of canned beans. Dried beans are far more economical with a better taste and texture.
There are many ways to cook beans. I soak them overnight and let them simmer on the stove for a few hours until tender, but you can use a pressure cooker or slow cooker. Freeze them in 1-cup batches for quick meals later.
