Vitamin A deficiency is the leading cause of blindness in children in the developing world.
A number of organizations are encouraging women in developing nations, particularly in Africa, to grow orange sweet potatoes instead of white or yellow varieties, which do not have the high levels of beta-carotene.
These programs are not only improving the health of families, they are teaching women a skill to provide income.
