Though it might be nice to think of ourselves as free and wild, in fact, we’re not.
For better for worse, we’re civilized. Or to put it another way, domesticated. Plants like wheat, rice, corn, barley, oats, sorghum – starchy grains – have supported human life for at least the last 11,500 years.
11,500 may be just en eye blink in evolutionary time, but it’s a long enough experiment to demonstrate that grains – prepared correctly and unadulterated – are a reliable staple.
Because of adulteration, some people have developed allergies to specific grains, but thanks to our modern food supply it’s possible to pick and choose the grains that are best for you.
