The term “nutritarian” was coined by Dr. Joel Fuhrman to describe individuals who prioritize their food choices based on maximizing the intake of a wide variety of essential nutrients in their diet.
To achieve this high level of nutrient density, Dr. Fuhrman advises that 90% of the daily diet should consist of nutrient-rich plant foods abundant in health-promoting phytochemicals. This includes a diverse selection of green vegetables, colorful vegetables, and fresh fruits.
In his book “Eat to Live,” Dr. Fuhrman shares a recipe for a delicious and nutrient-rich soup that exemplifies his nutritarian approach.
One helpful tip in the recipe is the use of fresh carrot juice. If you don’t have a juicer, there’s no need to worry. Simply chop some carrots and blend them with water in a blender. You can choose to strain the pulp for a smoother consistency or keep it in the soup for added fiber.
By following this nutritarian philosophy and incorporating nutrient-dense plant foods into your diet, you can take significant steps towards achieving a healthier and more vibrant lifestyle.
