Delicious and rich in nutrients
Dr Joel Fuhrman coined the term “nutritarian” to describe those who make food choices based on getting a wide variety of nutrients into their diet.
To support this level of nutrient density, Dr. Fuhrman recommends that 90% of the daily diet be nutrient rich plant foods with health-promoting phytochemicals: green vegetables, colorful vegetables, and fresh fruits.
Dr. Fuhrman demonstrates making a delicious and nutrient rich soup in this recipe from his book “Eat to Live.”
One tip: the recipe calls for fresh carrot juice. No juicer? No problem. Chop some carrots and puree them in a blender with water. You can strain the pulp, or leave it in for more fiber.
