Roasted Avocado and Quinoa Salad
Three superfoods in one great dish
Did you know that you can cook avocados? That’s right, roasting avocados really brings out the rich, nutty flavor, and makes them stand out even more on our superfoods salad. It’s packed with nutrients from the kale, the quinoa, and the avocado, and is a perfect start to a chilly winter day.
Ingredients
1 large avocado
1 cup quinoa, cooked
1/2 small red onion, peeled & finely diced
1 tablespoon lemon juice
salt and pepper
1 tsp olive oil
1 small handful parsley, minced
1 small bunch of kale, minced
1 clove garlic, grated
Instructions
Preheat oven to 400 degrees F.
Cut avocado into quarters, lengthwise, discarding pit and peel.
Drizzle with a little olive oil and season generously with salt & pepper.
Bake for about 15 minutes or until hot and sizzling and starting to go a little golden at the edges.
Meanwhile, place quinoa in a bowl
Add onion, minced parsley, and minced kale
Season and stir.
Cover and stand until needed.
Dice the avocado and toss into herb and quinoa mixture
